FOG-ManholeThe purpose of the Fats, Oils and Grease Control Program, or F.O.G. is to prevent sewer system blockages, obstructions and overflows due to the contribution and accumulation of fats, oils and grease from food service establishments, commercial facilities and industrial facilities. The accumulation of FOG within the collection system (sewer lines and pump stations) can result in the decreased carrying capacity of sewers due to congealed, cooled grease which coats the inside of the sewer pipes. Once a pipe becomes constricted, the potential for a collection system blockage increases. Collection system blockages caused by FOG contribute to sanitary sewer overflows and may also cause sewer back-ups into homes and businesses.

In 2008, the Department adopted new rules and regulations to aide in controlling grease discharges from food service establishments by requiring those customers to meet minimum standards for installing grease control equipment and setting minimum maintenance standards of those facilities.  The newly adopted rules and regulations, or "FOG Management Policy" can be found here:   FOG Management Policy
